This coffee comes from Xishuangbanna sometime shortened to Banna located in the southerly most autonomous region of China’s Yunnan Province. The people, culture, and language embody the Shan, Dai and Tai peoples more than Chinese in this border province to northern Burma and northern Laos.
The coffee trees are the Catimor variety grown at 1,600-1,700 meters above sea level where the ripe cherries are harvested to undergo an anaerobic natural process, in which the cultivated cherries are placed in sealed tanks absent of oxygen where they ferment in order to develop unique flavors. After removal from the fermentation tanks the coffee is then sun-dried.
