Our Doi Saket selection comes from Thaton Village of Chiang Mai’s Doi Saket District. Doi Saket is Northern Thailand’s oldest coffee growing area and therefore benefits from the fact that heirloom Typica coffee varieties are still grown and harvested. Most of Thailand’s Arabica coffee production comes from the higher yielding, more disease resistant Catimor tree varieties. Catimor varieties don’t offer as complex a flavour profile as most Typica coffee tree varieties, thus our Doi Saket selection offers a chance to sample Thailand’s heirloom coffee varieties dating back to the late 50s, and later 1970’s tree plantings led by various Royal Project initiatives.
The cool climate and elevation perfect for Arabica coffee cultivation by the region’s ethnic Lanna communities begins in late December and ends by March of each year. The dry processing, “Natural processed” in the coffee industry’s parlance, produces a combination of sweet tangy fruit coupled with prune, and hints of dried mango from this year’s harvest.
