Our Thai Huai Hom Arabica coffee hails from Mae La Noi District in Mae Hong Son Province, the far northwestern province of Thailand.  This coffee has been lovingly cultivated by Mae Hong Son’s Karen ethnic minority communities since the late 1950s, initiated by missionaries that later became important CoffeeWORKS supply chain partners, the Integrated Tribal Development Foundation.  Huai Hom’s early coffee output could not have moved forward without the vital organisational and financial support that came from the Royal Project Foundations, and early U.N. crop replacement initiatives that saw the reduction of opium production in favour of coffee cultivation in Thailand’s “Golden Triangle” Region.

Hua Hom Coffee’s production process focuses on dry-processing that emphasises even, and well ripened cherries that are first washed and fermented in round vats before 5-7 days of direct sun drying, followed by another 5-7 days of shade / partial sun drying.

The roasting is decidedly light to reveal Mae La Noi’s terroir and aforementioned processing that yields a bright, snappy acidity, floral aroma, and flavour of caramel, green apples, and a long orange sweetness.
