Light Roast – Where Origin Shines Through
Light roasts stop shortly after first crack, when the beans have just begun to develop roasted characteristics. The surface stays matte and dry because oils haven’t yet migrated to the exterior. What you get is a coffee that retains most of its original flavour.
Expect brightness as light roasts often deliver citrus acidity, floral notes and fruit forward sweetness. Take our Ethiopia Guji, for example you’ll taste berries and honey, qualities that would disappear under a darker roast. Kenya Impala brings a wonderful fruit medley. These coffees work beautifully as pour-overs or through drip brewers, where their complexity can fully develop.
Because the beans are denser than darker roasts, so they require slightly hotter water (around 200–205°F) and a finer grind to extract properly. Get it right, and you’ll experience the full spectrum of what coffee can be.
Medium Roast – The Versatile Middle Ground
Medium roasts develop further into the roasting process, typically ending around the start of second crack. The beans turn light brown, and you begin to see a balance between origin characteristics and roast-developed flavours. Caramelisation brings out sweetness, body increases, and acidity becomes more mellow.
This roast level works across nearly every brewing method. Our Honey Hills and Espresso Napoli demonstrate this well as they offer cocoa, caramel, and nut notes alongside hints of their original fruit character. You can brew them as filter coffee in the morning, pull espresso shots in the afternoon, and they’ll perform consistently, and the reason why medium roasts dominate café menus and office coffee stations.
For businesses, medium roasts offer reliability. They’re forgiving across different grind settings and brew ratios, which means less waste and more consistent results. They also work well in milk based drinks where you want the coffee to complement rather than compete with the milk.
Dark Roast – Bold Flavours, Full Body
Dark roasts push well into second crack, where caramelisation intensifies and natural oils rise to the bean’s surface. The result is glossy, deep brown beans with pronounced roasted characteristics. Origin flavours recede, but what you gain is power and consistency.
Acidity nearly disappears at this roast level, replaced by a heavy body and long finish. Dark roasts excel in espresso, where their intensity cuts through milk and creates rich crema. A common misconception is that many people assume dark roasts contain more caffeine. They don’t. The extended roasting process actually reduces caffeine content slightly.
